Since many will be baking in the upcoming weeks, I wanted to share this nice little trick to soften your rock-hard brown sugar:

Unilever wants to help its competitors go green <3
Unilever owns 12 patents that help keep ice cream products at a warmer freezer temperature, which cuts energy use and emissions. And it’s sharing its findings with the ice cream industry, for free!
From Unilever’s chief R&D officer for ice cream (dream job, anybody?) Andy Sztehlo:
We’re pleased to take this next step in our work to increase the temperature of our last mile ice cream freezer cabinets. By granting a free non-exclusive license to these 12 reformulation patents, we hope our peers and partners from across the ice cream sector will benefit and work to tackle emissions across the industry.
We believe through collaboration, we can reduce the cold chain’s impact on the environment, whilst continuing to deliver the great quality ice cream products our consumers love.

New York sues PepsiCo over plastic pollution
Attorney General Letitia James is working OT to make 2023 her bitch (I could make a better joke if it was Coke being sued since D.J. Trump famously chugs the stuff, so just use your imagination here).
James “accused PepsiCo of contributing to a public nuisance by generating a significant share of plastic waste found in and near the upstate Buffalo River, including more than 17% of trash that could be readily traced to specific brands,” Reuters reports. “She also said the company failed to warn consumers about the potential health and environmental risks of plastics in its more than 100 brands, and misled the public about its efforts to fight plastics pollution.”
If this lawsuit is successful, it will mean other plastic polluters will need to clean up their act quickly. Let us pray for such an outcome.
The world’s biggest polluters strike a climate deal
The U.S. and China vowed to increase their use of solar, wind and battery storage to cut down on their use of coal, oil and gas, Grist reports. And yet:
Nothing in the statement specifies how, or when, China will phase out its use of fossil fuels to generate electricity, let alone stop building coal-fired power plants. Still, the country has been expanding its use of renewable energy faster than any other, and the International Energy Agency predicts China’s use of coal could peak next year, then dwindle in coming years.
House Republican wants to ban cultivated meat in Florida
Florida House Representative Tyler Sirois introduced a bill that would ban the production and sales of cultivated (AKA cell-based) meat in Florida. Violators of this proposed bill could face misdemeanor charges, as well as a fine up to $1,000.
